Vegetable oils are extracted from the ripe fruit of oilseed plants by pressing. Their quality depends on the fruit or seed and the type of oil used. Virgin vegetable oil from the first cold pressing retains both its saponifiable and unsaponifiable fractions.
On the other hand, refined vegetable oil increases the yield of a crop and is more stable against oxidation. It is an oil that almost completely loses its unsaponifiable component, which gives it its main characteristics, such as aroma, color, and flavor, among others.
This unsaponifiable component, which ranges between 1% and 2%, contains squalene, pigments, polyphenols, and phytosterols, among others. Finally, oleates are obtained by macerating a plant in vegetable oil so that the oil is enriched with the plant's fat-soluble active ingredients.
